Mature Dentistry Applicant - Reference help please - The Student ...

Hiya,this is my first time starting a thread - not even sure if its ok to do so please bear with me!

I am a mature student (age 23) applying for dentistry.

I need ALOT of help and advice for my application please.

Let me tell you about my situation.
A little while before my GCSE exams, a family member and I were involved in a motor accident. I had minor injuries but this other family member did not. So I had to become their "carer". My exams did not go well and so I only have 5 a-c grades. Two subject at A. One at B and science double award CC. Not very good and barely meet the requirments for demtistry.
I decided to put my education on hold - took some time off and then took on a part-time job in retail to help financially at home.
So now five years have passed and I really want to apply for dentistry.
I have started studying A levels in Biology, Chemistry and Mathematics since June by looking at specifications and teaching myself (due to sit AS units in Jan)
So I dont actually have any concrete grades for AS/A2 after GCSEs.
I have over 10 weeks of work experience (various places and departments) and three extra-curricular activities (two of which I had graduated in prior to GCSEs and the other one after).

My biggest obstacle at the moment in my application seems to be the reference section!

I literally have no-one to ask except my employer, who I have know for 2+ years.
My part-time job bears no relation to dentistry - and my referee only "knows" me as an employee. While I believe he will write me a good reference, Im not sure he can apply my work skills in relation to dentistry. On top of that I dont see how it would be ok for him to put my grade predictions down.
As I said I have no-one else to ask.
I checked UCAS webdite which says:

Who should write my reference?
Your referee should know you well enough, in an official capacity, to write about you and your suitability for higher education.
If you're at school or college, or left recently, ask your principal, head teacher, teacher or tutor.
If you left school or college several years ago, ask your current or previous employer or in the case of voluntary work your supervisor.

I also asked my w/e placements who said no because they dont know me well enough.

I also need to include why I have such a gap between my GCSEs to the present - which apparently needs to be mentioned by my referee.
But my employer knows nothing about my past and I do not want to tell him since its very personal and very few people know of this.

Can someone please advise on what to do?
